We have built a unique winery. It is a "house of straw" and is designed in this way for its ability to recreate the controlled environment of cellars and caves that have always played an important part in the maturation of great wines. The remarkable insulating properties of strawbale has meant we are able to reduce the energy needs of the winery as well as use a product that would have otherwise gone to waste. This innovative building marries our commitment to environmental sustainability and production of fine wine.
