This luscious 'Blanc de Noir' (white from red) produced from Pinot Noir grapes displays a rose gold colour, a yeasty aroma and is perfumed by seductive varietal characters of strawberry conserve, earth and spice. These exotic aromas engage seamlessly with a subtle palate that is both creamy and textured with a soft lingering finish.
This fruit is sourced from Pinot Noir vines planted 1998 at Steve Funnel’s Hat Rock Vineyard, Bellarine Peninsula. The fruit was handpicked at 12.5 Bé and whole bunch pressed using an airbag press with careful oxidative juice handling. Only free-run juice was transferred to 100% French barrel without prior clarification. Fermentation was by indigenous yeast on full solids. Following fermentation to dryness (14 days), lees stirring was conducted for 30 days. After racking and assembling, the wine was matured in old French barrels on fine lees until bottling in June 2008.
An elegantly structured and dry wine, to be enjoyed with food. Drink with bacon and mushroom risotto, or smoked salmon omelette.
