Pale straw colour. Good varietal Sauvignon Blanc flavours without being too heavy on the gooseberry. The palate carries these flavours, increasing in intensity through with very good natural acidity before a nice long finish. A fully structured wine, with 100% barrel ferment used in making but the oak is readily carried by the fruit.
 
This wine is made from fruit off 30 year old vines from Mt Duneed in Geelong. The 2008 Sauvignon Blanc was handpicked at 12.8 Be and pH 3.1 in mid-March. Fruit was whole bunch pressed using an airbag press with careful oxidative juice handling. Juice was transferred to 100% French barrel without prior clarification. Fermentation was by indigenous yeast on full solids. Following fermentation to dryness (21 days), lees stirring was conducted for 30 days. Wine settled and matured in tank and barrel on gross lees for a further 4 months prior to bottling.
